Cassata Ice-Cream Recipe

Did you know we serve nine different varieties of handmade ice-cream at our chocolate shop! As with our chocolate production, our ice-cream is made in small batches with quality ingredients. As always, we love to showcase local, unique and interesting ingredients.
We recently put the call out to our lovely Canberra and Murrumbateman community to help us create our festive ice-cream flavour and the winning suggestion was Cassata, so here is a recipe which you can easily make at home with an ice-cream churner!
The star of this ice-cream is our Native Plum artisan chocolate bar, which is made with a rich 56% dark chocolate, with native Australian Davidson Plum, raspberries and edible petals. We also use single source dairy products that we source from The Little Big Dairy, based in Dubbo and definitely recommend that you source the best quality milk and cream for this recipe.
This is an easy to make ice-cream recipe that produces great results, every time. For best results, we only suggest attempting this recipe with an ice-cream churner as the churning is a vital step in achieving the correct texture.
Ingredients:
750mL heavy cream (35% fat)
1 cup caster sugar
350mL full cream milk
1 vanilla bean
250g flakes almonds
150 g chopped glace cherries
150g chopped glace ginger
200g good quality dark chocolate, chopped finely
Method:
Using an electric mixer, whip the cream, vanilla bean scrapings and sugar on medium speed until the sugar has dissolved and the mixture has slightly thickened (it's important not to overmix at this point, as you don't want to incorporate too much air and volume at this stage!)
Turn the mixer to low speed and add the milk, mixing until just combined.
Pour into your ice-cream churner and churn for 30 minutes or until you have achieved your finished consistency. While churning:
- Add the nuts, fruits and finely chopped dark chocolate
Set until frozen, scoop and enjoy.
As with all of our ice-cream and chocolate, we make this variety with no added preservatives. Please consume within two weeks for best enjoyment - if you can wait that long, that is!
